From your guy's review, I get the feeling that you didn't really understand how the Final Summoning worked. Maybe it's just because I've played the game a hundred times, but I'll try to briefly explain how the Final Summoning works, and how this factored into Seymour's plans and motivation.
The basics of the Final Summoning is that you need two people to complete it: the Summoner and one Guardian. Yunalesca asked Yuna to chose one of her Guardians to become the Fayth for the Final Summoning. This is because the original Final Summon, Lady Yunalesca's husband, Lord Zaon's Fayth statue was destroyed and his soul gone forever. But Yunalesca knows how to create a Fayth and thus was able to continue the Final Summoning tradition after the destruction of Lord Zaon's Fayth. Once a Guardian was chosen as a Fayth, they become the Final Summon if the bond between the Summoner and the chosen one is strong enough. The Guardian, as the Final Summon, is able to destroy the shell of Sin using all the energy from the Summoner, which kills the Summoner. But, like the game states, Sin is not the real problem. Sin is just a shell for Yu Yevon. So with it's shell destroyed, it attaches itself to the closest Aeon available (which happens to be the Summoner's Final Aeon). Yu Yevon, who according to Square Enix has gone mad and lost all intelligence beyond its desire to keep Summoning Sin and destroying everything, uses the Final Aeon that killed the last Sin to create its new form. And so that cycle repeats.
This is why Jecht transforms in the final battle. He was the Fayth for Braska's Final Summoning and is basically an Aeon. The monstrous form he takes is literally his form as the Final Aeon Braska used to defeat Sin. In the official guide, in order to avoid spoilers they do not call the Final Boss "Jecht". He is called "Braska's Final Aeon".
As for how this factors into Seymour's plans... it is clear in the game that he was a Summoner before becoming a monk in the church of Yevon, and he made his pillgramage with his mother as his Guardian. He made it to Zanarkand and his mother because his Fayth for the Final Summoning, producing the powerful Aeon Anima. But Seymour never used his mother to face Sin. I have two theories about why, but one is more likely than the other. The more likely theory is that during the process of getting the Final Aeon, he learned about how each Fayth for the Final Summoning becomes the new Sin. After all, Yunalesca readily admitted this when questioned by Yuna in the game, so she's not hiding it. It was probably about then that Seymour decided Spira was better off destroyed than destroying Sin for a short time. As he said in the game: "I will DESTROY Spira! I will SAVE it!" In his mind, if there is no life, then there is no suffering. So that is the sole reason that he wanted to marry Yuna. He didn't give a crap about making the people happy. (If he did, he wouldn't be planning to mass murder them). He just wanted to form the sort of bond with Yuna so that she would choose him as the Fayth for her Final Aeon, allowing him to become Sin reborn so he could obliterate Spira to "save" the people from their suffering.
So that's basically how the Final Summoning works. I'm sorry if this is long-winded, but it is a very important part of the game.
