I know this is late, but I've known a lot of people who have a hard with this extra area. Before you go, stock up on some Hero's and Aura.
To get to Ultima Weapon is a dangerous road. But I have a way to make it simple. There are three enemies that are a pain in the ass. Iron Giants, Ruby Dragons, and Behemoths. Have one character with Pain on ST-ATK, another with Death, and another with Sleep or Blind for extra measure.
Iron Giants can be completely incompacitated I f you Blind them. Sometimes it misses so you want to be sure some else has Sleep junctioned. Once they are blinded, use Meltdown and start unloading on them. It will take a little bit, but they go down eventually and without anyone getting hurt.
Ruby Dragons are a bit trickier, but they are susceptible to Sleep. Use that and then start using Diablos and Demi. If you want, use Doomtrain to inflict other things if you wish. Do not physically attack, do not wake the dragon. They stay asleep for a time which allows you to use gravity attacks several times, also cast Protect on your party in case he awakens. He has a pretty nasty breath attack that counts as physical damage. If one character is dead, he will not use the breath attack, fyi.
Behemoths are easy. They are highly susceptible to death. Have it one on character and in 1-2 turns, he should die. He also can be blinded which makes it easier if the death does not connect.
There are other beasts as well, but most of them fall easily. If you have trouble, keep death on because most of them will not be immune to it. This area is the only time I think following the no levelling policy will help. I believe Courel or whatever is down here and if your party is on Level 100, it can wipe you out with Lv. 5 Death.

If you have no Hero's, it is possible to defeat him if your characters absorb Earth to prevent his Quake attack from impacting and if you cast Protect on the party to shield against some of his physical attacks. Recover or Selphie's Full-Cure is highly recommended. Shell is also good because it will block some damage from Meteor. He is incredibly fast, sometimes striking twice in a row. Having Zell with Haste junctioned to his Speed helps a lot. They will go blow to blow without having to cast haste. If you can pull off Lionheart a few times, he should fall quickly.
