This is kind of a hard question to fully cover, but hearing the question about ultimate party made me think of this since they're fairly similar. Basically, most of the jobs are reoccurring more or less across the series, so which would you say is the best at the job in Final Fantasy? I know I'm going to miss a few jobs, and I'm not exactly sure how to cover FFXII or really FFVII and FFVIII because of the nature of that system, but here's what I think:
Knight/Warrior: For utility I would have to say Auron, but Cloud would be first if FFVII was a bit more clear on jobs. White Mage: Eiko for me. I think she's really underrated in FFIX and Holy is extremely useful. Summoner: Yuna, no question. Monk: The only monk I can even think of would be Sabin, and he's amazing anyway so I would say him, Black Mage: I think Hope would fall in as a black mage, so either him or Terra if she counts. Thief: I really liked Locke, but I think Zidane was a bit more useful in his game than Locke was in FFVI Dragoon: Gotta go with Freya although Kain was cooler as a character. Time Mage: This rarely was it's own job exclusively, but the best example I can think of is Tidus. Blue Mage: I think all of these have been almost useless, but probably Quina because his moves weren't restricted to a limit break.
There are other classes like samurai, ninja, alchemist, etc but I can't personally think of more than one or two examples of each so I didn't include them. What do y'all think?

Here's my list:
Warrior- Squall because it's easy to max his stats and renzokuken is bad ass.
White Mage- Rosa because she can get every white magic spell but can also do decent damage with her bow.
Summoner- Rydia, she didn't choose this role, she was born with it, and was raised by summons.
Monk- Sabin too, but Yang was a good one too.
Dragoon- I don't see how it can be anyone other than Kain.
Black Mage- Lulu, why lie, it's the titties.
Thief- Locke, he's just better at it than anyone else.
Time Mage- can't think of any true "time mages"
Blue Mage- Quistis, degenerator can kill basically any enemy.

Let me just preface this with "I haven't played every game in the series."
Warrior: Cloud. In my current play through of FFVII, he's kicking some major ass. White Mage: Yuna. She can heal, and she can dish out some major damage with summons and with Holy. Summoner: Yuna. Monk: (I'm assuming monk means a character that is bare-handed.) Tifa. She can surplex bosses ten times her size. Dragoon: *shrug* Black Mage: Vivi. And not just because I like the little guy. Thief: Zidane, for the crazy amount of damage he can do with his Thievery skill. Time Mage: Tidus, one of the main reasons he stayed in my party until end game. Blue Mage: Quina. I don't even know, but he/she eats monsters to get their powers, and that's cool!

I feel like there's one in FFVI but if so, I'm completely blanking on it FFVI didn't have a dragoon class necessarily, but you could get the dragoon boots relic and give any character the ability to jump.

The correct answer for all of the Jobs is Mog from FF 6. especially in the dragoon category since he's the only spear user besides Edgar. I always gave him the Dragoon Boots, and the Dragon horn (makes them jump 4x) Second Choice for Dragoon would be... stay tuned to FF 11.
